A rice cooker frittata is one of the easiest meals you can make. It’s perfect for breakfast or a quick dinner when you need comfort food.

One of the things I love about using my rice cooker for breakfast is how easy it is. Just dump the ingredients into the rice cooker, turn it on, and leave it alone for about 15-20 minutes. That gives me time to finish getting ready for the day.

We enjoy frittatas for breakfast or dinner. After all, it’s a delicious comfort food that delivers lots of nutrition and flavor.

You’ll also appreciate it when you have hungry mouths to feed but very little time. Whether you’ve been at the office all day or stayed home and chased after little ones, a frittata is the perfect meal.

That gives you time to set the table, put some bread in the toaster, and pour a cup of coffee … or glass of wine.

Unless you’re on a low carb diet, you’ll probably want a side dish to eat with your frittata. Besides buttered toast, I enjoy banana nut muffins or pumpkin muffins.

If you don’t have time to make muffins, but you want something with more flavor, try slathering some pumpkin butter on some toast.

Although eggs are typically a breakfast food, this rice cooker frittata is a wonderful quick-and-easy family dinner under $10.

You can get most of the food groups in this one dish. Simply add whatever veggies you like.

If you’ve tried my shrimp and grits, you know I’m not averse to eating breakfast foods for dinner. Or you can have a bowl of grits with your frittata.

Most mornings my husband and I fend for ourselves for breakfast. However, once in a while, we do something different. Since we both like eggs and cheese, omelets and frittatas are among our favorites.

We also enjoy most vegetables, so I toss in as many as I can get away with. Sometimes I serve a side of even more vegetables, such as steamed broccoli or green bean bundles.

Ingredients

The basic ingredient for any type of frittata is an egg. Of course, if you’re cooking for more than one person, you’ll need several eggs.

Since we’re into lots of flavor around here, I add more ingredients. Cheese is the second most important thing.

Next, you’ll need vegetables. You can basically put any type of cut-up veggie in your frittata. In this one, I used a frozen seasoning blend.

You can also include sliced zucchini, tomatoes, spinach, and anything else you have in the fridge. Put whatever you want in there. After all, it’s your frittata.

Sometimes I include meat. Although eggs have plenty of protein, the meat adds extra flavor. I didn’t use any in this rice cooker frittata.

However, I would probably add some ham for a dinner frittata. If someone in your family wants a vegetable frittata, you can also serve meat on the side.

How to Make a Rice Cooker Frittata

Spray your rice cooker with nonstick cooking spray since eggs stick to whatever they’re cooked in.

Scramble the eggs with a whisk or fork. Next, sprinkle salt and pepper into the eggs according to personal taste.

Fold the vegetables into the eggs. If you want them sautéed beforehand, you can do that. However, I typically just add them frozen to save a step.

Finally, sprinkle cheese over the egg mixture. Put the lid on the rice cooker, plug it in, and press the “cook” button. See how easy this is?

Now you can do whatever you want while your rice cooker frittata cooks.

After it is finished cooking, you can either use a spatula and put it on a plate or carefully cut it while it is in the rice cooker.

I prefer to put it on a plate to prevent damaging the interior of my appliance.

Why Cook a Frittata in a Rice Cooker?

One of the main reasons to make a rice cooker frittata is that it’s super easy, and it doesn’t require constant attention.

Another reason is that if you don’t get to it right away, it’ll keep the food warm.

I’d like to warn you not to keep the frittata in the rice cooker too long, though, or the eggs will overcook. And you certainly don’t want overcooked, rubbery eggs.

I have two rice cookers. One of them came from HSN, and the other one came from Walmart.

Also, Kohl’s frequently has them on sale, so you can get one from there as well.

Leftover Frittata

Not only is this frittata delicious right after you cook it, but it also makes great leftovers. You can refrigerate the uneaten slices and heat them afterward in the microwave.

What to Serve with a Frittata

What you serve with a frittata has a lot to do with when you’re having it. If I’m in a hurry first thing in the morning, I might simply have the frittata with a cup of coffee.

However, when I have more time to enjoy a leisurely breakfast or brunch, I might add a side of this delicious fruit and yogurt parfait. When the grandkids are with me, we might have these fruit kabobs and a side of yogurt for dipping.

Frittata vs. Quiche

Although there are some similarities between these two egg dishes, there are some significant differences too. A quiche is cooked more slowly in the oven. It has a crust that helps the eggs maintain their form.

A frittata doesn’t have a crust, so you have to handle it more carefully if you want it to keep its shape when you serve it. You cook it in a pan on top of the stove, or you make it in a rice cooker like I do.

This delicious rice cooker frittata is a nutritious breakfast or dinner that the whole family will enjoy.

Ingredients

  • 3-4 eggs (more if you’re cooking for a family)
  • 1 cup of vegetables (chopped or sliced)
  • 1/2 cup of cheese
  • Salt and pepper to taste
  • Chopped or diced meat (optional)

Instructions

  1. Spray the inside of the rice cooker with nonstick cooking spray.
  2. In a medium bowl, scramble the eggs.
  3. Fold in the vegetables (and meat if you include it).
  4. Salt and pepper according to taste.
  5. Pour the mixture into the rice cooker.
  6. Sprinkle the cheese evenly on top.
  7. Put the lid on the rice cooker and press the “cook” button.
  8. Cook the frittata for approximately 15 minutes or until the eggs are set.
  9. When it’s done, carefully remove the frittata with a plastic spatula and put it on a plate.
  10. Cut it into slices and serve with toast and fruit.
